Gradually whisk in half and half until smooth. Stir in cheddar cheese and 1/4 cup Parmesan cheese until melted; add ham and cooked pasta. Pour mix into 9 x 13 baking dish and sprinkle with remaining Parmesan. Bake at 350 for 20-25 minutes.

Mincemeat (1 jar - 32 ounces)
Medium lemon zest (1)
Egg yolk (1)
Milk (2 teaspoons)
Cold shortening (1/3 cup)
Cold margarine (1/3 cup)
All-purpose flour (1 3/4 cups)
Light rum – optional (2 tablespoons)
Chopped pecans or walnuts - optional

Preparation
In a medium sized bowl, combing the flour with salt. Cut in the cold shortening and add the margarine. When the mixture bears a close resemblance to small peas, sprinkle around 1/3 cup of ice-cold water. Now, quickly turn it into a ball. Wrap this dough in waxed paper and chill it in a refrigerator for an hour. Meanwhile, combine mincemeat with some lemon zest and place it aside.

Prepare a floured surface and roll out 2/3 of the chilled pastry. Take a nine-inch plate and line it with the pastry and trim the edges. Pour in the mincemeat mixture. Meanwhile, roll out the remaining pastry and cut 10 strips having a width of around ¾ inch. Now, arrange 6 strips in a crosswise fashion on the pie. Place four strips lengthwise. Once done, press gently into the sides of the pie shell. Meanwhile, beat the egg yolk with milk. Use this preparation to brush over the pastry. Bake this in a preheated oven for 10 minutes at 425 degrees F. After a duration of 10 minutes, reduce the heat to 350 degrees. Now, you can use rum to sprinkle on the top and even use some walnuts as well.

Fish are an amazing natural resource that are an important source of food for people the world over. They are all aquatic creatures (live most of their time in water) have gills and fins and are either harvested from the wild (ie caught by fishing) or are farmed in tanks or large salt-water cages.

Of the many species of fish that humans consume they can range in flavor and texture from delicate fish such as flounder, dace and chub to firm full-flavored fish such as tuna, swordfish and shark.

Fish represent a source of high-quality low fat (and generally low-cost) protein that's very healthy and tasty and for much of humanity fish represents a basic part of the diet and the main protein source. Indeed, following the eruption of Toba 74 000 years ago when 90%+ of the human population was exterminated sea-fishing off the coast of East Africa may have been the only factor to keep the human race alive.

Fish and fish dishes occur in every human civilization. In the West, however, we under utilize our fish resources relying in the main on a small number of fish species that are vastly overfished. But, when freshwater, saltwater and farmed fish are all considered together fish represent a vast resource that we are under-using. Fish also lend themselves to being preserved by salting, smoking, drying and pickling, which is why fish were such an important storage food in the past (and remain so in parts of Africa and Asia today).

Below is a traditional British recipe for preserving fish by pickling:

Pickled Herring

Ingredients:

  • 2kg salt herring (make your own, or you can buy)
  • 3 large onions,chopped
  • 1 tbsp mixed herbs
  • 1 tbsp rosemary
  • 1 tbsp paprika
  • 4 sprigs of dill, chopped
  • 6 cloves
  • 6 black peppercorns
  • 12 allspice
  • 650g dark brown sugar

Method:

Brush any salt from the herring then place in a pan of cold water and soak over night (soak for 30+ hours if using commercial salted herring). Once soaked, discard the water then pat the herring dry and slice into pieces about 3cm wide. Combine with the onions in a bowl then add all the remaining ingredients (except the vinegar and sugar). Toss to combine then set aside to marinate for 3 hours in the refrigerator.

After this time combine the vinegar and sugar in a pan and heat gently until the sugar has completely dissolved. Stuff the herring and the onion and herb mixture into sterilized pickling jars then pour the hot sweetened vinegar over the top. Seal well and store in a cool place, turning at least twice daily to ensure that the vinegar and all the flavours penetrate the fish.

The herring can be eaten after 4 days, but the flavour improves if left for a few days more.

Fish is one of the healthiest meats that you can eat, but most people have no idea how to cook these healthy fish recipes. One great healthy fish recipe is Baked Salmon. This dish is easy to prepare and is sure to please even the meticulous of people at your dinner table.

For this recipe you will need:

1. 1 ounce can of salmon,
2. 8 ounces of tomato sauce,

3. ½ teaspoon of hot sauce,
4. 3 tablespoons of Miracle Whip,

5. 1 sliced tomato,
6. 1 ounce of grated low fat cheddar cheese,

7. 3 tablespoons of cream or milnot,

8. 1 teaspoon of garlic powder,

9. salt and pepper to taste.

Pre-heat your oven to 350 degrees Fahrenheit.

Flake the salmon and place it into a medium sized oven pan. In a bowl, mix the tomato sauce, cream, salt, and garlic powder. Pour over the salmon. Place the tomato slices on top in a decorative manner and then scatter the cheese on top. Bake until cheese is melted.

You can try this recipe with either tuna or mackerel as well. Either type of fish will bring a delightful taste to your palate that is sure to become a family favorite. Along with your healthy fish recipe, you can prepare other green vegetables such as fresh green beans, broccoli, or Brussel sprouts. However, if want something quick, just fix a green salad.

No matter which type of fish you choose, your healthy fish recipe will be enjoyed time and time again. You may wish to try adding other vegetables such as onion, green pepper, or even zucchini for a unique and tasty treat.

Simple and Versatile Pasta with Garden Vegetables and Fresh Basil Recipe



This is a very basic pasta dish that is extremely flexible in what you can add or omit. You can try it with chicken, chorizo, or seafood and use a variety of seasonal vegetables.

Despite the whipping cream, this dish is very light and not heavy as some pasta dishes are. The shallots and white wine bring out a lot of extra flavours. If you like a bit of sweetness, add a small can of chopped tomatoes.
Easy Pasta with Garden Vegetables and Fresh Basil Recipe

3 large garlic cloves, chopped
1 sweet onion cut 1/2 inch chunks
2 shallots, diced
1/2 each green, red, yellow pepper cut 1/2 inch chunks
2 large tomatoes cut in chunks
25 snow peas cut in half
10 basil leaves, rolled and diced
500 ml whipping cream
White wine
Rotini pasta or your favourite pasta
Parmesan cheese
Salt and pepper to taste

Depending on how you will have this as a side dish or main dish this can make 3-5 servings.

Cook pasta according to the package direction. Put peppers and snow peas in a
microwave safe bowl for about 1 minute and a half.

Saute garlic, onions and shallots, add salt. Add peppers, snow peas and tomatoes and continue to saute. Add salt and pepper to taste and a bit of white wine. Add whipping cream and let it reduce. If you add all the cream at once, be sure to keep an eye on it as it will reduce quickly. You want enough liquid in there so when you add the pasta and parmesan cheese it won't soak it all up and become dry.

Once reduced, add pasta, parmesan cheese and basil. Mix well until pasta is coated.

You can serve it with cracked pepper on top and/or sprinkled with more parmesan cheese.
